You’ll need:

  • potatoes (waxy or medium)
  • onions
  • garlic
  • sugar
  • balsamic vinegar
  • stock (beef or vegetable)
  • parsley, mustard, salt and pepper
  • minced cooked kelp
  • lemon juice to taste


Boil potatoes. Fry onions and garlic in a pan with some sugar, add balsamic vinegar and let it reduce, then add some vegetable or beef stock. Cut the potatoes in slices and add to the pot. Add a bunch of fresh parsley, some mustard, salt and pepper. Close the lid and let the potatoes soak up the liquid. Finally add the minced kelp, lemon juice and finely cut spring onions and mix thoroughly.
